The 'Post workout' Pan-Seared Fish & Salad

After a work-out, the last thing I want to think about is putting in a work-out in the kitchen! The point is to feed yourself in a way that both nourishes and re-energizes your body but doesn't lack in flavor or feel more like a snack than anything else. This is probably one of the most simple nutritious post work-out meals you can whip up in just under 15 minutes!
Ingredients
2 fillets of fresh fish Tilapia or Swaii*
2 Teaspoons of Old Bay fish & poultry seasoning
1/2 cup of lemon juice or 1 lime
Organic Baby Arugula
Organic Spinach
1 organic roma tomato
Lemon Vinaigrette for salad
* I recommend using Swaii for more flavor
Recipe
Fish:
Rinse fish with cool water and place fillets on a flat surface to prep. Pat dry fillets with a paper towel and sprinkle 1 teaspoon of Old Bay seasoning over both sides of your fish -- repeat step with second fillet. Pre-heat stove on medium fire and coat skillet or frying pan with a thin layer of cooking oil {preferably sesame oil --which is lower in saturated fat}. Place your fish in pre-heated skillet and cook for about 2 minutes on each side until both sides have browned and slightly crisp. Drizzle with lemon/lime juice and serve.
Salad:
In a large bowl toss spinach leaves, arugula and sliced roma tomatoes and top with lemon vinaigrette or choice salad dressing.
Voila, that was easy!
