The 'Kitchen Sink' one pot meal

I call this one the 'Kitchen Sink' one pot meal because literally every vegetable in my fridge that's just about expired gets thrown in here. Carrots, peas, potatoes, zucchini... you name it, it's going in. It's like a sale at Macy's after December 25th and everything must go! You could easily use this as a base to make a pot or shepherds pie {saving that for another post soon!}, but you can also just serve with rice or pasta. This ones a very practical recipe that is kid tested, and momma approved! Check out the recipe below.

Ingredients {serves 4}

olive oil

2 whole carrots

2 potatoes

 2-3 cloves of minced garlic

2 tbsp thyme leaves

1 package of ground turkey {approx. 1 lb}

1 tsp cayenne pepper

1/2 coarsely chopped onion

2 tsp salt

1 tsp pepper

1 can or thawed out frozen packet of mixed vegetable: golden whole kernel corn, green beans, peas etc. 

1 can of tomato sauce

Recipe

 Preheat pan to medium-high heat and add olive oil, peel and chop carrots and potaoes into smaller pieces then add to pan (fresh carrots and potatoes take longer to cook so they go in first). Cook for 1-2 minutes. Add garlic & thyme. Cook for another 2 minutes then add ground turkey, cayenne pepper and chopped onion. Cook for 3 minutes. Add salt & pepper and mixed veggies. Use about 1/2 can of tomato sauce and stir food together in pan. Let it simmer on low fire, then add more sauce to desired thickness and preference.
