If you had one choice between never stepping foot in a Target store again & having a finger cut off, which finger would you choose and why? In all seriousness though...what is there not to love about a grown ups version of Disneyland? Like many of you, I'm constantly making pit stops to buy everything from batteries to Lysol and groceries there... and when shopping with a kiddo that's not always easy! But, I do have to say I'm always really impressed with how good their produce is, especially their wild caught salmon & chicken fillets from Simply Balanced. Portioned, cut, clean...it's my ultimate "busy mom" pocket trick! I use it pretty much all the time! Tonight for dinner, I tried to step in a little bit of a healthier direction to get us back on track because you know "New Year, New me blah blah". This recipe is pretty simple & straight forward...just pure bare bones protein.

Ingredients

Chicken

{2} Simply Balanced chicken fillets 

1/2 onion

3 cloves of garlic sliced 

black course pepper  

{pinch} sea salt & Old Bay seasoning  

1/2 tsp thyme

 

Salad

arugula

tomato

avocado 

lime

Italian dressing

olive oil {I use a Greek olive oil & lemon version from Trader Joes}

 

Recipe

Chicken

Add all the ingredients together in a bowl & then set aside to let marinate, preheat skillet to medium-high heat with cooking/olive oil, once the skillet is hot add chicken + ingredients into pan, cook on high heat until crispy golden & brown for approx 3-5 minutes each side. 

 

Salad

Toss salad ingredients together and enjoy!
